Ingredients


6 wooden sticks, skewers, or Popsicle sticks

16 Medjool Dates, pits removed

1/4 cup non-dairy milk (such as soy or almond)

1/4 cup melted coconut oil or non-dairy butter

1 1/2 tablespoons peanut butter (or other nut or seed butter)

1 1/2 teaspoons vanilla extract

6 Granny Smith apples (or your favorite variety)


Optional toppings:


Chopped nuts

Non-dairy white chocolate chips

Coconut flakes

Mini non-dairy chocolate chips

Sprinkles

Melted non-dairy chocolate Toasted granola


Directions

  1. Soak the dates in the milk overnight in the fridge for extra-smooth caramel. (If you forget, don’t worry — it will still be delicious!)

  2. Blend the dates, milk, coconut oil, peanut butter, and vanilla extract until completely smooth, scraping down the sides as needed.

  3. Push a stick into the center of each apple to create a handle.

  4. Use a spatula to spread a thick layer of caramel mixture over each apple. Place on parchment paper and refrigerate.

  5. Place each topping on a separate plate. Roll chilled apples in desired toppings. Drizzle with melted chocolate if you’d like.
