Creamy Zoodles with White Beans:


  • zucchini has vitamin C to boost your immune system

  • sunflower seeds are packed with protein, fiber and vitamin E for beautiful skin

  • white beans have thiamine to help improve focus

We LOVE zoodles because they're just as fun as pasta and you get the benefit of an extra veggie on your plate. 



The deets about the recipe


The zoodles are reminiscent of a spaghetti and the creamy sauce is a cross between a pesto and a creamy Alfredo.

Creamy Zoodles with White Beans


Serves 5


Ingredients


1 can white beans


Sauce


2 ripe avocados

1 cup fresh basil leaves

3 cloves garlic

¼ cup toasted sunflower seeds

2 Tablespoons fresh lemon juice

½ teaspoons sea salt

Cracked black pepper, to taste


Veggies


6 large zucchinis 1 Tablespoon olive oil (optional)


Directions


1. Using a spiralizer, spiralize the zucchini into noodles and place in a large bowl lined with paper towels to soak up any moisture. Zoodles can be eaten cold or warmed in olive oil for 3 minutes in a large skillet over medium heat.

2. Blend the sauce ingredients together in a blender or food processor.

3. Remove paper towels and pour the sauce over the noodles and toss well; top with white beans and stir to combine.


*For a paleo option, leave out the beans!
