But maybe you’re looking for a healthier version that packs just as much of a punch that your kids will like as well? Then this pesto grilled cheese sandwich is for you!

This isn’t one of those watered-down recipes that you’ll have to force your kids to eat because it’s good for them. It has the indulgent characteristics of a traditional grilled cheese, with some additional ingredients added in to give it some body.

Customize it with these tips

It's very simple to customize according to what you already have in the fridge! Don’t have cilantro? Use some lettuce or spinach instead! You can even add in some sprouts! No bell peppers? Zucchini will work splendidly! If you’re a fan of avocado, don’t be shy about adding in that beneficial fat! You can add or subtract whatever vegetables you’d like, same goes for the seasonings. This is a very forgiving recipe so don’t be afraid to put your creative spin on things :)
